Banana bread is one of my favorite treats for breakfast or snacks because it’s a smart way to save your very ripe bananas and reduce (or completely skip) refined sugar in your cake.
For one loaf of Banana Bread
Ingredients
3 very ripe bananas
1/3 cup of avocado oil
1 teaspoon of baking soda
1/2 cup of coconut sugar (optional)
1 1/2 cup of gluten-free flour
a pinch of salt
2 large eggs
1 teaspoon of vanilla extract
3/4 of chocolate chips (optional)
Instructions
Preheat the oven to 350F and butter a pan.
In a medium bowl, prepare the wet ingredients: mashed bananas then add the eggs, vanilla, and oil.
In a large bowl, combine flour, baking soda, salt, and sugar.
Pour the dry ingredients into the wet ingredients. Add the chocolate chips if desired.
Bake for 50 minutes to 1 hour.
Let it cool down before serving it.
